Marzipan recipe | Will you be making it this Christmas?

A recipe you could make as a cake covering or for sweets (petit fois)

This marzipan recipe handed down by our Deputy CEO’s mother makes a marzipan that can be used on cakes like simnel (easter) or Christmas cake or for decorative marzipan fruits and so on.  It can turn out a little wet and will be improved if left overnight in the fridge.

Marzipan recipe: INGREDIENTS

8oz ground almonds

8oz sugar

1 large egg

1 tsp lemon juice

1 tsp brandy

drop of almond essence

Marzipan Recipe: THE METHOD 

Put the sugar and egg in a bowl and put the bowl over a pan of barely simmering water, and beat the sugar and egg together with a fork or a whisk for about 10-15 minutes or until thick fluffy.

Remove from heat and allow a short cooling time

whisk in a teaspoon of lemon juice and a drop of almond essence or brandy if you like the taste

Now stir in the ground almonds until it forms a thick marzipan paste.

As I said above if the marzipan recipe mixture is a little wet then leave overnight, but this can be shaped or rolled immediately, for Christmas cake it can be rolled directly onto the cake or stuck to ir with hot apricot jam (yum), coloured with food colouring and shaped into marzipan fruits…this Christmas (or may be easter) you can enjoy this marzipan recipe as part of the festivities.
